Consuming a sprout, whether it be a wheatgrass, broccoli, alfalfa, or a bean sprout, is like eating a little plant, providing a number of concentrated nutritional, digestive and enzymatic properties that would be difficult to get in one package. Sprouted seeds, grains and legumes break down the complex sugars responsible for intestinal gas and contain high vitamin content, especially B vitamins.
