Get the most nutrients from your raw food with this very healthy and satisfying “pasta” recipe, made simply from very finely sliced zucchini. This dish is a perfect addition to your healthy diet as it consists of nothing other than living raw foods.
1 bunch of basil
½ cup pine nuts
2 tbsp. lemon juice
½ cup of cold-pressed olive oil
Pinch of salt
½ clove garlic
3 Large Zucchini
1 large tomato
Combine all Pesto ingredients and blend in the Power Mill Blenderuntil desired consistency.
Julienne (very thinly slice) zucchini and tomato into strips (like spaghetti).
Combine pesto, zucchini and tomatoes. Serve with additional pine nuts if desired.
The tomatoes are a refreshing addition to complement the dish.
